The Matheson Restaurant & Bar is one of Sonoma’s premier food & wine experience, featuring two unique restaurant concepts and a wine wall all shining under one roof.
It gives visitors the chance to choose – their – own – adventure, starting with a wine tasting at the wine wall, snacks or cocktails overlooking the Healdsburg Square, and an elegant dining experience in the main dining room.
We interview Chef and owner, Dustin Valette, who says there’s a little bit of everything, with options for any type of day or evening you are looking for.
What Type of Food Do You Offer at The Matheson?
Chef Dustin Valette: The food at The Matheson is influenced by our surrounding county. We source local ingredients and let our close farmer partners tell us what we should be using!
The Matheson and Roof 106 strive to support the local agriculture as much as possible, and visit the farmer’s market weekly to determine our menu. Where Roof106 uses a wood-fired oven to spark the palate, The Matheson is an ever-changing reflection of creative collaboration.

What are some popular dishes and local wine pairings?
Chef Dustin Valette: Our menu changes regularly.
At the moment, Chef Matt Brimer’s Alaskan Halibut with peas & carrots, forbidden rice, and green curry is a fan favorite. It is a little classic, a little spicy. In the main dining room, our wine pairings are completely customizable, and we have an extensive list to choose from.
On Roof106, Chef Brian is always running a delicious pizza special, but one of the classics from the beginning has been a broccolini pizza with charred onion, Calabrian chili, feta, and preserved lemons, which goes great with the Crux Grenache Blanc from Russian River Valley.

How important is having a local wine list? Is it extensive?
Chef Dustin Valette: Our wine list is definitely extensive, with over 88 wines available by the glass thanks to our wine wall.
Our list is a split between local and international. We of course think that local wine is very important, it is a cornerstone of Healdsburg and our community.
Sometimes, we find that by the time guests join us for dinner, they have tasted many local wines throughout their day and are looking for a wider variety, so we are excited to be able to offer a large selection of both local and international wines for them to choose.

What makes The Matheson Unique?
Chef Dustin Valette: The Matheson is unique because it can be anything our guests wish it to be.
We are right on the Healdsburg square, with a beautiful view. We can be a tasting room, just come in for some wine from the Wine Wall, and continue your Healdsburg adventure – or we can be casual pre-dinner snacks and cocktails on the roof – or we can be two completely different dining options. Lunch or dinner with pizza and shareable bites, or an elegant tasting menu or refined a la carte options in the main dining room.
We offer all these choices, while still highlighting our community and supporting local businesses.
